Pretty good marinade. I wanted a dish to help use up my leftover Cinco de Mayo limes and I found it! Salty, a little tangy and a little sweet. This flavor reminded me of Teriyaki sauce. It was super easy and I already had everything on hand. Almost as an afterthought I added a little bit of garlic to the marinade.
I oven roasted both fresh Brussels Sprouts and cubed Russet Potatoes to go with the chicken. Next time I may marinade the meat a little longer. Again, I used what I had on hand so I used boneless skinless chicken thighs instead of breast. I grilled this on the indoor counter top grill.
